Pumpkin Bread

Pumpkin Bread

2 ¾ c. Unbleached Flour 1 tsp. Allspice
1 ½ tsp. Baking Soda ¾ c. Vegetable Oil
¾ tsp. Baking Powder 2 ¼ c. Granulated Sugar
1 ½ tsp. Salt 3 Large Eggs
1 ¼ tsp. Cinnamon 1 ½ c. Pure Canned Pumpkin (12-15 oz can)
1 ¼ tsp. Nutmeg ½ c. Water
1 tsp. Ginger ½ c. Chopped Walnuts *

Preheat oven to 325°. Grease & flour two bread pans.

In a large bowl, beat together sugar & oil. Blend in eggs. Stir in pumpkin & water. Blend in spices. Mix in dry ingredients. *Walnuts are optional. Fill bread pan 2/3 way full. Let stand for 15 minutes.

Bake for 50-60 minutes. Knife should come out clean when bread in done..
